Autumn is Here – Cake and Cycling

The nights are officially drawing in, the base layers have come back out and for me its officially cake season. I love baking when its cold outside (admittedly partly because having the oven on makes the kitchen so toasty) and because you cant beat a lovely bit of cake when you get back in from cycling.

Not only is cake super tasty and satisfying after a few miles in the saddle, if its a Victoria sponge or lemon drizzle its got to count as 1 of your 5 a day, right?

So here are a few of my favourites in 3 different categories:

Cakes and treats for cycling with – 

Fruity Flapjacks – From Jamie Oliver

You can put just about any fruit in these little lovelies, I like to put extra cashews in mine, and I also have a bit of a habit of just eating the warm mixture before I put the rest in the oven, its a tough job, but someone has to do a taste test.

Chocolate Brownie – From Mary Berry

I can’t even begin to describe how good these are, every time I make them they are eaten by my friends and family the same day. Also if you want to change it up a bit they are great with white choc chips or little pieces of fudge. I may have just drooled on my key board oops. I cut the recipe into 16 squares and its great out on the road or warmed up with ice cream.

Cakes for when you get back from your ride – 

Lemon Cake – Good House Keeping

This cake is just great, it has the right balance of sweet and sour and is so moreish, also its so easy to bake. Best eaten within a couple of days of baking, I slice it like a loaf and keep it in an upside down cake tin for easy access. You never know when you will need cake in a hurry

Millionaires Short Bread –  BBC Goodfood

This is my Kryptonite, and I can’t resist it. Just be careful that the caramel sauce doesn’t spit at you as you are stirring it, and that you get it thick enough, otherwise you end up with an equally tasty but more messy version. I always use milk chocolate as I have a ridiculously sweet tooth, and if you want to make it a bit fancy you can marble the top with a bit of white chocolate too.

Cakes for other times ie breakfast pudding (yes its a thing) – 

Victoria Sponge – Mary Berry

This makes a massive cake, which is great news. If you want to try a different filling fresh whipped cream and strawberries make a great alternative to Jam and Butter cream. A classic but fab cake.

Cherry Rock Cakes – The English Kitchen

A very versatile and simple bake and to be honest great for any time, if I have them in the house I take one in my handbag for emergencies. The sprinkled sugar added just before baking givens them a great finish and a little bit of crunch.

As you can clearly see like most cyclists its all about the cake, and there is no bad time to have one.
